An extraordinary culinary experience at CIVIFORM with the MEDS Garden+ project
On March 20th, thanks to the Interreg Italy-Slovenia MEDS Garden+ project, a truly special masterclass took place at CIVIFORM (https://www.civiform.it/), involving students and trainers in a culinary journey to discover the authentic flavors of the Friuli Venezia Giulia region.
The masterclass was led by the renowned Friulian chef Stefano Basello from the prestigious Ristorante 1905 in Udine, who guided the participants in preparing delicious dishes rich in seasonal herbs and vegetables.
Among the dishes prepared:
Cavasso Onion (Slow Food Presidia), enhanced with a sauce made from sic' (acidified buttermilk), chives, and mustard seeds.
Asparagus Ravioli, accompanied by a delicate lobster sauce and an aromatic oil made with a mix of seasonal herbs, including lemon verbena.
Chicken Wafers, enriched with the intense flavors of bay leaf, rosemary, sage, and thyme.
The event was highly educational, not only for using fresh and local products but also for the deep dive into traditional preparation techniques that enhance the region's culinary excellence. It was a unique opportunity for the fourth-year catering students to challenge themselves with top-tier experiences, in perfect alignment with CIVIFORM's mission to provide quality training.
