MEDS GARDEN+ Gastroethnological Workshop with tasting was organised by the partner Municipality of Nova Gorica within the framework of the MEDS GARDEN+ project.
The event took place on Saturday, 29. 6. 2024 at the premises of the associated partners KTD Lokovec and KS Lokovec, at the TECHNICAL HERITAGE CENTRE in Lokovec (Slovenia).
Chef Mark Smerajc from the organic farm Toncevi in Pedrovje presented local seasonal ingredients with a Mediterranean twist, as well as the preparation and use of these ingredients, to a large number of participants from different target groups during a culinary workshop. The menu presented plant and animal ingredients used by ancestors in the culinary arts, prepared in a modern way. The recipes and instructions for their preparation enabled everyone to prepare food with their own hands.
The tasting menu for workshop participants included:
1. Omelette with sheep's milk served with ravioli filled with meat (capocollo) and goat's ricotta, cream, fresh cheese and herbs
2. Bread made from organic whole wheat flour with honey and olive oil, baked in a cast iron pan
3. Homemade potato dumplings in salted butter with goat's cheese, grated goat's ham, spices (brisket, rocket) and mature goat's cheese
4. A refreshing dessert of sheep yoghurt and elderflower jelly served with fried elderflowers
Participants followed the preparation of individual dishes with interest, and during the tasting expressed their positive surprise at the interesting flavours with 'it's good, it's very good...'.
As part of the Kovaški odmev 2024 event, the MEDS GARDEN+ project, the planned outcome 'Lokovec Community Forest Garden' and other planned activities were publicly presented.
