The aim of the Masterclass is to present the gastronomic specificities of the area to stakeholders and interested target groups, in particular students, in such a way that the catering professional has to take into account the seasonal availability of ingredients and culinary traditions (fresh local seasonal vegetables and other edible vegetable species in a short supply chain approach or from farm to fork).

The Masterclass consists of preparation, practical execution, using professional techniques, and tasting.
The seasonal product chosen is radicchio Rosa di Gorizia, the preparation the classic Solkan dish ‘regut ku če bet’.

The presentation is accompanied by the stories and experiences of restaurateurs from the Goriška cross-border area. Aspects of sustainability and healthy eating will be highlighted.

The event will be held on Thursday 20/02/2025, between 15:00 and 18:00 at Šolski center Nova Gorica BIOTEHNIŠKA ŠOLA ŠEMPETE PRI GORICI 5290 Šempeter pri Gorici, Slovenia.

Bilingualism in Italian and Slovenian will be guaranteed. The event is free of charge, subject to availability.
