On Thursday, August 22, 2024, KZ Agraria Koper, a partner in the MEDS GARDEN+ project, organized a Master Culinary Workshop (Masterclass) on Istrian Gastronomic Heritage. The event was held in the charming Istrian setting of Kodarinov Mill, where participants explored the rich culinary traditions of Istria.
The workshop focused on two main themes:
- Herbs in the Kitchen: Fresh Pasta
An expert in authentic Istrian cuisine demonstrated the preparation of fresh pasta, enhanced with various herbs. Participants observed the skilled use of local herbs, which impart a unique taste and aroma characteristic of Istrian dishes. - From Garden to Plate: Discovering the Secrets of Healthy, Simple, and Sustainable Cooking
Participants were introduced to the principles of healthy and sustainable cooking, centered on fresh, locally sourced ingredients. The workshop also included the preparation of a traditional dish cooked "under the bell," symbolizing the connection to nature and local traditions.
The event drew as many as 50 participants, who will now help spread awareness of the cuisine that highlights typical Mediterranean flora and promotes the sustainable use of resources.
The MEDS GARDEN+ project aims to preserve and promote the unique flora of the northern Adriatic, along with its distinctive aromas and flavors. By organizing master workshops like this one, experts in the hospitality industry train participants on how to use products that represent local excellence. The goal is to enhance nutritional value, reduce waste, and use ingredients sustainably, contributing to the long-term preservation of our heritage and natural resources.
