On Friday 12 September 2025, an extraordinary culinary masterclass was held at the Purissima Mediterranean Garden as part of the MEDS GARDEN+ project. The event was led by chef Črt Butul, who used his creativity and expertise to guide participants on a journey of discovery through Mediterranean cuisine.
The masterclass programme included the preparation of three selected dishes:
zucchini carpaccio with salted anchovies and fermented ricotta,
slow-cooked pork neck with Risano trout caviar and a side dish of seasonal vegetables,
ricotta gnocchi with citrus zest powder and honey, compressed watermelon with fig leaf syrup.
In addition to the practical demonstrations, there was a discussion on the use of Mediterranean raw materials, sustainable practices and Istria's gastronomic heritage. At the end, participants tasted the dishes prepared and shared a convivial moment.
The masterclass was held in two languages (Slovenian and Italian) and was also broadcast live, allowing remote participation.
The initiative confirmed once again how cuisine can combine tradition, innovation and sustainability, strengthening the links between the local area and the wider community.
