On May 15, 2025, the Civiform professional training center hosted the workshop entitled "Green in the glass: workshop of flavors and creativity" at its headquarters in Cividale del Friuli.
On this day of exchange and collaboration, Civiform welcomed representatives of local excellence: suppliers, producers and restaurateurs of the area, with whom it shared valuable paths and the goal of building synergies and networks for the future.
The protagonists of the workshop were the school's bar and restaurant students, who tried their hand at creating cocktails and appetizers based on herbs and plants from the educational garden.
Participants were able to taste original creations such as the "Summer Chill", a cocktail based on chamomile and mint infusion, lemon juice and chestnut honey, the "Aperitivo Nonino Botanical Drinks", and the "Dandelion Dream" with peach juice and dandelion syrup. Accompanying the meal were appetizers such as dandelion cjarsons and a silene plum cake (sclopit) with beetroot mayonnaise.
A special thanks to all those who participated and made this experience special, including:
• Chef Germano Pontoni, with whom Civiform is collaborating on "Tutti a tavola", an initiative dedicated to those who suffer from dysphagia;
• Gianfranco Cassin of Etica del Gusto;
• Marinella Ferigo of the Italian Federation of Chefs Fvg;
• Massimiliano Sabinot of the Vitello d’Oro Restaurant;
• Paolo Bartolini and Ermal Malja of the Elliot Restaurant;
• Antonio Germani, Aibes Head Barman;
• Ben Little, writer, sommelier, blogger and founder of the Pignolo Association of Friuli Venezia Giulia; Cristina Domenis of Domenis 1898 srl;
• Cristian Sedran of Corte Natisonis, the Commercial Tourist District of which Civiform is a partner and with which it works to enhance the territory and its excellence;
• Alessandro Pomarè, known by all as Poma, thanks to whom Civiform recently took part with its students in the Sanremo Festival and with whom precious synergies are being created.
The event was an opportunity for everyone to enhance the products of the territory and the creativity of Civiform students, in a perfect combination of tradition and innovation
