We invite restaurateurs and tourism operators to take part in a special series of culinary workshops

Dear Sir or Madam,

You are cordially invited to participate in a special series of culinary workshops aimed at restaurateurs and tourism operators who wish to enrich their offer with a unique story linked to local heritage. The central theme will focus on the castellieri and the prehistoric period (Bronze and Iron Ages), which will be connected—through an interdisciplinary approach—to contemporary cuisine and the development of high-quality tourism experiences.

Date and venue:

  • Tuesday, 7 April 2026, from 9:00 to 13:00, Council Chamber of Palazzo Pretorio

  • Monday, 13 April 2026, from 9:00 to 13:00, Tenuta Purissima

  • Tuesday, 14 April 2026, from 9:00 to 13:00, Tenuta Purissima

Workshop content:

The programme is based on the concept:

“From the hearth of the prehistoric castelliere to the contemporary plate.”

Participants will have the opportunity to:

  • learn about nutrition during the Bronze and Iron Ages in the Upper Adriatic area,

  • discover ingredients and food preparation methods in prehistory (cereals, legumes, wild plants, fermentation, cooking over fire, etc.),

  • take part in the contemporary interpretation of prehistoric dishes,

  • actively contribute to the creation of new culinary concepts,

  • develop concrete ideas for integrating heritage into their own offer.

The aim of the workshops is to develop at least two dishes inspired by prehistory and to lay the foundations for an innovative 5* KAŠTellieri culinary experience.

Speakers:

  • theoretical part (prehistoric cuisine): Polona Janežič

  • culinary part: renowned chef Uroš Štefelin and Marcela Klofutar

The workshops will be based on active participation, the integration of theory and practice, and a sustainable approach to developing culinary narratives. We believe they represent an excellent opportunity to enrich your offer, strengthen local identity, and develop new authentic tourism experiences.
