In the second edition of the Wine School Carso/Kras, held last weekend, the AGROTUR+ project partner GAL Carso - LAS Kras prepared an extensive program for 11 distinguished culinary journalists to explore the cross-border Karst's rich viticultural and culinary heritage.
The program began in the Sgonico wine cellar, where Stefano Cosma guided journalists through the rich history of viticulture in the area. Participants learned about traditional and modern viticultural techniques firsthand, explored vineyards under Robi Jakomin's guidance, discussing cultivation techniques and native grape varieties. The visit to Castelvecchio Estate featured in-depth tastings of malvasia and teran, ending with a traditional dinner at the Social Trattoria in Gabrovizza.
The second day started at Perinova farm in Slovenia, followed by a lunch at Osmiza Kocjančič, introducing the true flavors of the Valley. The afternoon continued in Trieste with the main event of the day—Teranum Festival, celebrating the red wines of Karst with tastings and presentations from local producers. The day concluded at Menarosti Restaurant among seafood dishes and traditional desserts, balancing innovation and identity.
The third day was dedicated to discovering other treasures of the Karst region. The participants began the day with a tasting of local extra virgin olive oils led by Giacomo Cecotti, where the indigenous bianchera variety stood out. This was followed by a presentation by Aleš Pernarčič on Karst beekeeping and the exceptional marasca cherry honey – a true gem of the Karst region. The three-day program concluded at the Bajta Karst Farm, where participants explored the cellars and maturation rooms, enjoying an intense, multisensory experience. The symbolic awarding of participation certificates marked not only the end of the second edition of the Wine School but also the beginning of new shared visions for the area's future development.
This event was not only a promotion of local wines but also an opportunity to enhance the visibility of the cross-border Karst area, fostering exchanges and connections among wine experts and the media.
